A study in process where all steps eventually intertwine. This beer begins as a rustic Farmhouse Ale, before conditioning on multiple strains of Brettanomyces. We then begin multiple additions of hand-pitted peaches from Baird Family Orchards in nearby Dayton. After a year, we move it to a careful selection of neutral oak barrels to fully mature before packaging by hand to condition in the bottle. We consider this our celebration of Oregon harvest season. - 8% ABV
